This boneless acorn-fed shoulder is easy to eat and store at home. Carefully handled, this shoulder has been removed from their bones to enjoy its purplish pink flesh and its whitish pink (sometimes yellowy) fat infiltration. Its oiliness is due to its high content in oleic acid, which gives it the marbling appearance. This shoulder is matured for at least 30 months in natural drying cellars. A real Iberian delicacy!
